JOB DESCRIPTION

Guest Satisfaction

  • Encourage and further develop culture of providing a personalised service to each guest.
  • Ensure all guests needs are catered for, no matter the demographic. Ensure we have the specific services that every guest may need.
  • Promote more locality and provenance in products offered
  • Promote more detailed / funnelled feedback from guests

P&L

  • Payroll – ensure it is in line with sales activity and business needs
  • Regularly review beverage offering to ensure it is sellable in product and price point, while achieving GP
  • Ensure product, service team all work together to achieve good GPs without comprising guest experience
  • Ensure that the team know what their revenue targets are, and help them to want to over-achieve on them
  • Focus on underdeveloped revenue streams
  • Work with Chef to refine the menu development, reducing wastage while offering the right product
  • Ensure costs are understood and controlled for all expenses lines (e.g. cutlery, cleaning, uniform, consumables, etc)
  • Ensure linen is specifically controlled within department

Compliance

  • Ensure all areas are kept clean
  • Work with team to achieve consistent 5* EHO ratings
  • Work with engineers to ensure equipment FO is maintained and serviced
  • Alcohol licencing – ensure the department is operating within the correct limits, and all staff are fully and regularly trained
  • HR administration – ensure that all mandatory paperwork and training is completed fully, accurately and on time
  • Allergens – ensure full compliance through training, understanding and accurate information
  • Food hygiene – ensure all staff training and refreshed to FH L2
  • Ensure department has all H&S training and refreshers relevant to their role
  • Ensure account, PCI, and use of data is complaint with regulations – work with FC to manage account procedures
  • Complete DM shifts as required

Team development

  • Maintain a happy, incentivised and engaged work force
  • Ensuring through regular review that every team member has development goals and a clear career path
  • Ensure a consistent message is used to deliver the best guest service
  • Provide work-place based learning for F&B team and Estate in general. Ensure this is regularly review in relation to the changing business
  • Create an environment where openness about mental health and well-being is prioritised and discussed in line with GDPR, and referencing the EAP
  • Supporting the team where they have additional learning commitments (e.g. NVQs, WSET, etc)
  • Ensure all team are well-presented, with consistency
  • Mentorship of future stars
  • Develop relationships with people in the industry to open avenues for development and outreach

Generic

  • Ensure PeopleHR data is up to date and used correctly
  • To be constantly vigilant in respect of H+S issues and report issues
  • To be constantly vigilant of security risks and immediately report any suspicious incidents
  • To undertake other duties from time to time as may be required
  • Completion of expense claims
