Job duties include:

  • Managing the booking process ensuring all relevant details are taken and the customer journey is personalised
  • Make the customers’ stay a memorable experience by providing excellent service, communication and administration
  • Answer the phone, take reservations and deal with any enquiries
  • Be detail oriented to ensure that all booking details and relevant reports are accurate and communicated to other departments.
  • Prepare daily reports as required
  • Manage guest payments, invoices, receipts and reconcile shift transactions
  • Manage comprehensive hand over to following shift.
  • Communicate closely with Housekeeping on room departures, stayovers and arrival rooms for cleaning and opening of sofa beds.
  • Report maintenance items to the maintenance log book.
  • Ensure guest satisfaction at all times.

Pastry Chef De Partie

Quality and creativity are second to none to wow all of our customers particularly with the re-launch of the hotel and particularly the revision of all food offerings.

 

RESPONSIBILITIES

Prepare dishes to the highest standards of quality, safety and consistency

Ensure recipes are followed to ensure risk of cross contamination are kept to a minimum

Ensure brand standards are followed to ensure consistency of quality

Work as part of a team in preparation, cooking, garnishing, or presentation of food

Follow standards and regulations relating with cleanliness, hygiene and safety

Ensure chef is informed where food or other supplies need to be ordered

Check the quantity and quality of received products

Work with head chef to ensure departmental compliance with all relevant regulations (e.g. COSHH, HAACP, Fire & Food Hygiene)

Ensure head chef is notified of equipment malfunctions and breakdowns

 

GENERAL

To follow Hotels procedures should staff require to exit the building for any reason.

To ensure staff do not enter any unauthorised areas.

To feed back any matters of concern as soon as possible to the Hotel Manager

Bar Manager

Job description

  • Plan and source drinks lists to compliment menus and maximise sales and profitability
  • Review drinks lists seasonally in conjunction menu changes.
  • Directly work in any area of the bar or restaurant when circumstances dictate
  • Understand guest profile and adapt wine and drinks list to suit
  • Manage selection and delivery of wine flights as appropriate.
  • Create pairing options for regular and ad hoc menus
  • Assist guests during the dinner service with wine recommendations and selection for perfect pairing with their dinner.
  • Decanting of the wine as appropriate.
  • Develop a training program for all Team Members to improve their knowledge of wine tasting, cocktail making and service.
  • Train Team Members throughout the hotel in order to maximize their understanding of wine and proper service techniques including glassware, pour levels, storage, beverage pairings and the ability to understand guest preferences.
  • Ensure that all wine is served in proper glassware and in proper condition.
  • Maintain all beverage lists to be accurate, up to date and free of errors.
  • Manage wine cellar and ensure it is fully stocked.
  • Respond appropriately to customer complaints.
  • Use Hotel approved chemicals and substances correctly and safely following certain procedures and by using correct dilution ratios.
  • Only use chemicals for which you have received relevant COSHH training
  • To advise guests with allergies of which dishes on the menu are and are not suitable for them
  • Take orders from patrons for food or beverages, and using EPOS systems enter these accurately onto till.
  • Be fully conversant with EPOS and make changes as required
  • Collect and process payments from customers.
  • Check patrons’ identification to ensure that they meet minimum age requirements for consumption of alcoholic beverages.

  • To be involved in month end stock takes and production of results
