RESPONSIBILITIES – Stock
- To only use Hotel approved suppliers for food and drink.
- To ensure beer lines are cleaned regularly and safely, and recorded correctly
- To ensure all wastage is recorded accurately in preparation for month end stock take
- To assist with month end stock take
- To use measures correctly as required by statutory regulations
RESPONSIBILITIES – Bar service
- Ensure that guest experience in the bar is smooth, seamless and appropriate
- Ensure all guests are given a warm and friendly welcome.
- Be able to build and maintain long term relationships with regular guests
- Be able to recommend and upsell wine and beverages.
- Be able to explain how various menu items are prepared, describing ingredients and allergens (if necessary)
- To continually build products knowledge and bar skills
- Check identification of customers to verify age requirements for purchase of alcohol.
- Balance cash and credit cards reconciliations at the end of shift
- Attempt to limit problems and liability related to customers' excessive drinking by taking steps such as
persuading customers to stop drinking, or ordering taxis or other transportation for intoxicated patrons. - Ensure bar is well-stocked with beer, wine, liquor, and related supplies such as ice, glassware, napkins, or
straws. - Take beverage orders from serving staff or directly from patrons, and using EPOS systems enter these
accurately onto till. Collect money for drinks served or transfer to rooms immediately. - Efficiently and accurately serve wine, and bottled or draft beer. Mix ingredients, such as liquor, soda, water,
sugar, and bitters, to prepare cocktails and other drinks. - Maintain cleanliness of bars, work areas and tables throughout shift.
- Plan, organise, and control the operations of a cocktail lounge or bar.
- Order or requisition liquors and supplies.
- Serve snacks or food items to customers seated at the bar.
- Be an ambassador for the bar and the hotel. Recommend other services (restaurant, rooms) to patrons
- Provide guests with information about the hotel and about local areas, including giving directions.
GENERAL
- To follow Hotels procedures should staff require to exit the building for any reason.
- To ensure staff do not enter any unauthorised areas.
- To feed back any matters of concern as soon as possible to the Hotel Manager
